WFD: Green Goddess Smoothie

Celery, Kale, Green Apple & Banana Smoothie

So I'll admit: this is a specific taste. I love me some celery, and this Celery, kale, green apple and banana smoothie offers up plenty of its distinct notes. When you add i grapefruit juice and green apple for tartness, and frozen banana for sweetness and texture, you’ve got a super yummy snack with a ton of fiber. I find it filling and satisfying, and, as I’ve mentioned, I love the taste. I’ve been drinking them for the brunch like meal I’ve been having instead of breakfast, and been pretty happy about it. But even my sister, who is not a fan of celery and isn’t crazy about this concoction, admits that as a post-workout treat, it can’t be beat. So how can you get one of these yummy treats for yourself? Pretty simple really. You’ll need these supplies to make one smoothie.

  • One medium green apple, cored and sliced
  • 1 - 1 1/2 cups spinach or kale, frozen. If using pre-frozen spinach, keep to a cup or less. I've been freezing my own spinach from the fresh stuff we don't get around to using, and it's a lot bulkier than the spinach you buy frozen. The kale is much more consistent.
  • 1 banana, frozen
  • 1/2 cup grapefruit juice
  • 2 large or 3-4 small/medium celery stalks, chopped

Mix all this in a blender. If you’ve got a high-speed blender (like my Vitamix), you can go with pretty big chunks, like so.

But even if you’ve got a wimpy blender, slicing your goods into smaller chunks should do the trick.

Are you loving the idea but thinking you’ll never have the energy to get it going in the morning? Try a smoothie kit! Throw all your prepped ingredients into a freezer-safe bag. When the time comes, throw the bag in the blender and add any ingredients you need to. Often, people will add yogurt or juice to their ingredients.  Here, I’ll add grapefruit juice, though I am as we speak freezing grapefruit juice ice cubes, which I hope to add to the kit and make this an entirely assembled smoothie.

I mentioned how we're trying to eliminate processed and added sugars for the next couple weeks, and this smoothie, though by no means natural sugar-free, still fits that bill. And feels like a treat!
