Best Fastest Sandwich Rolls (makes 12-16)
Recipe very slightly adapted from Wives with Knives
- 1 cup milk
- ½ cup water
- 1 tablespoon honey
- ¼ cup butter, melted
- 1 egg, room temperature
- 4-1/2 cups all-purpose flour
- 1 package instant yeast (2-1/4 teaspoons)
- 1-1/2 teaspoon salt
- 1 beaten egg yolk (optional)
- Sesame and poppy seeds for sprinkling on top before baking (optional)
1. In a measuring cup, combine milk, water, honey, butter and egg.
2. In the bowl of a stand mixer or a large bowl, combine 2 cups flour, yeast and salt. Add in liquid and mix until combined (using paddle attachment or a spoon). Add in additional flour by the 1/4 cup, mixing until combined between additions, until a soft, sticky dough forms. Exchange paddle hook for dough hook and begin kneading, adding in additional flour until dough is no longer sticky. Or, turn dough out onto floured surface and knead, adding in flour as needed. I added in close to half a cup of flour, so don't be shy. When dough has pulled away from bowl and/or formed a smooth ball, about five minutes later, dough is kneaded.
3. Form dough into rolls of your preferred size and shape. There is enough dough for 12 decently-sized hamburger/sandwich rolls. Cover and let rise in a still place for 40-50 minutes.
4. About 30 minutes in, preheat your oven to 400 degrees.
5. When dough has doubled in size, if you like, brush the tops with beaten egg yolk (yolk only) and sprinkle with seeds.
6. Bake at 400 degrees for 10-12 minutes, until golden. Delicious for Summer Sammies.
