You can buy this stuff in the hummus section, but since it does take all of 3 minutes to make, I recommend trying your hand at it. It's delicious not just on falafel, but as a dip for veggies all week long. Use nonfat Greek yogurt and you're dealing with a pretty healthy snack.
Supplies
- 1 cup plain Greek or strained yogurt of any fat content
- 1/2 teaspoon salt
- 1/2 teaspoon dried dill or 1 1/2 teaspoon fresh dill, inced
- optional - juice of half a lemon
- optional - 1-2 tablespoons sour cream or mayo
- optional - 1/2 clove of garlic, minced
Directions
In a small bowl, combine half a peeled, diced and seeded cucumber (or just dice if you're pressed for time) with 1 cup plain Greek yogurt of any fat content. If you don’t have Greek, you can strain your own yogurt by placing it in a sieve lined with cheesecloth or coffee filters and placed over a large bowl. You do want your yogurt to be thick, so I wouldn't skip this step.
Then add ½ teaspoon salt, ½ teaspoon dried dill (or 1 1/2 tsp fresh dill, minced) and the clove of garlic.
If you like, you can add in lemon juice and/or 1-2 tablespoons of sour cream or mayo. Both are good; neither necessary. Cover and allow to chill out for at least 30 minutes before eating. Again, if you're pressed for time, just dig right in.
